Art Salad tries Tomato Pie

Tomato PieIn honor of the Heirloom Tomato Festival coming Sunday Aug. 28th at the Coventry Farmer’s Market- I tried a recipe using garden ripe tomatoes.

I’ve had this recipe in my ‘must try’ folder for quite sometime, and finally decided to give it a go for my folk’s anniversary dinner. It was a delicious success!

FARMER’S TOMATO PIE

prep: 30 mins bake: 30 mins stand: 10 mins

1 9″ pie crust ( your fav. recipe or a refrigerated will crust will do)

1  1/3 cups shredded italian blend cheese or shredded mozzarella

4 cloves garlic, minced

2 tbsp. fine dry bread crumbs

2 lbs. ripe tomatoes, cut into wedges ( about 6 cups)

1 cup halved cherry tomatoes

1/2 tsp. salt

1/4 to 1/2 cup loosely packed fresh basil leaves

1. Preheat oven to 450°. Bake unpricked pie crust as directed.

2. Reduce oven to 375°. Sprinkle 1/3 cup of cheese over baked pie shell. Sprinkle minced garlic and bread crumbs  evenly over cheese. Top with 1/3  tomato wedges, cherry tomatoes and 1/3 cheese. Repeat layers until shell is full. Sprinkle with salt.

3. Bake for 20 to 25 minutes or until pastry golden brown and tomatoes just starting to brown on top. Remove from oven to wire rack and sprinkle with chopped fresh basil leaves.

4. Let stand for 10 mins, before serving. ( if held longer, the juice from the tomatoes could make pastry a little soggy)

Hope you enjoy it as well!

11 am to 2 pm : Stop by the Coventry Farmer’s Market Sunday Aug. 28th to see my latest fused glass pendants and earrings. Let’s all do the Sunshine Dance to keep away Hurricane Irene. Last day of my Summer Savings Coupon- $ 4 OFF your glass purchase. Spend over $60 and double it to save even more!
